POSITION SUMMARY:

The Director of Food & Beverage is responsible for managing the daily operations of the food and beverage operation, including guest service, finance, inventory, safety, and human resources tasks. The Director of Food & Beverage needs to possess the ability to move in between any of our concepts, which include The Coffee Bar, The Roof, and all catering, banquet, and special event venues at The Durham Hotel.

The Director of Food & Beverage will work closely with the General Manager, and all other departments within the hotel, to deliver results that contribute to the mission and overall success of the hotel by accomplishing performance objectives focused on driving revenue, controlling costs, providing guest and associate satisfaction, and delivering product and service quality.

To be successful you should exhibit extensive experience in food and beverage service experience, operational applications, and employee training techniques. You will be a passionate leader with the ability to inspire, motivate, and support your team in order to exceed your professional goals. You will have high standards when it comes to guest experience, understand brand standards and you will take ownership and pride in your work.

DUTIES AND RESPONSIBILITIES:

Service Standards

  • Responsible for day-to-day operations including the Coffee Bar, Roof, and all Events/Catering, ensuring the quality and standards set forth by Early Bird Night Owl and the Durham GM.
  • Conduct effective weekly manager meetings with F&B managers to ensure service standards and expectations are properly communicated.
  • Attend various property meetings including leadership, BEO, and revenue.
  • Work a variety of floor shifts throughout the week to understand operations and find efficiencies, ways to increase revenue, and areas of improvement for training.
  • Monitor that food quality is consistent, appealing, and prepared to guest specifications.

Guest Experience

  • Interact with guests to obtain feedback on quality of service and food in outlets.
  • Resolve guest complaints and coordinate with department. leaders to resolve service delivery or quality breakdowns.
  • Monitor guest reviews across all platforms and communicate to team members.
  • Promote higher Guest Satisfaction Survey results and exceed company-based bench line criteria by uncovering and resolving inconsistencies.
  • Collaborate with Marketing to ensure that all F&B Collateral is accurate and updated.

Financial Performance 

  • Reconcile daily audit materials. (i.e., timesheet authorizations, perpetual inventories, void transaction reports, cash drops, and guest ledger entries).
  • Oversee all food and beverage ordering and inventorying
  • Prepare (or delegate and oversee), submit, and control payroll each pay period.
  • Review labor reports and overview, alongside other managers, employee schedules and punch clocks to eliminate unnecessary labor overages and to ensure that guest service, operational needs, and financial objectives are met.
  • Collaborate with marketing and sales to brainstorm programming and events.
  • Prepare monthly performance reports and commentary to influence yearly budget.

Health and Safety Standards

  • Enforce all food safety policies and procedures to ensure compliance with the laws, codes, and guidelines set forth by the FDA and Health Department .
  • Coordinate cleaning program in all F&B areas (but with the focus on the bar and beverage areas), identifying trends and making recommendation for improvements.
  • Enforce Early Bird Night Owl/The Durham human resources policies in all aspects of employee and guest relationships.

Team Hiring, Retention, and Mentorship

  • Communicate between operating departments to ensure that all areas of the hotel are advised of actions, programs and initiatives happening in the Food & Beverage Outlets.
  • Interview, coach, and support associates, ensuring they perform in accordance with established brand or hotel standards and consistent with The Durham’s core values.
  • Implement detailed and ongoing training programs
  • Help team members and managers establish KPIs and review goals biannually.
  • Maintain high level of day-to-day communication and interaction with team members, guests, vendors, and contractors, always in a mature and professional manner.
  • Advocate and maintain a team culture built on service excellence, professionalism, teamwork, and an environment to have fun, learn and succeed.

 QUALIFICATIONS:

  • Minimum of 3 years restaurant operations management, ideally in a hotel setting.
  • Strong leadership skills and the ability to train, coach, develop and motivate others.
  • Possess or have the ability to obtain Food Handlers and Tips Certification within six months of commencement of employment.
  • Highest level of integrity and a hands-on management style
  • Experience with 'Toast' point of sales system strongly preferred.
  • Exceptional organizational and operational skills, and detail-oriented with proven time management skills.
  • Excellent interpersonal skills, including tact and professionalism in dealing with staff, customers, and management, including writing, speaking, and public speaking.

*Ability to work a flexible schedule to include AM/PM shifts, weekends, and holidays

EDUCATION:

High School Diploma / GED required

Higher education degree in hospitality management or related field or equivalent work experience preferred

PHYSICAL ABLITIES:

  • Ability to be on your feet and alert for extended periods of time
  • Ability to lift up to 35 lbs. as needed
  • Continuous use of hands and arms
  • Continuous bending, reaching, and twisting

The Durham Hotel

Mid-Century Design Downtown Durham Spirit

A mid-century modern boutique hotel in the heart of downtown, The Durham is a vibrant destination, inspired by the spirit of its namesake city.

The Durham is a boutique hotel that has become a community and cultural hub in downtown Durham. The only independently owned and locally operated downtown Durham hotel offers 53 thoughtfully appointed rooms, including four suites, a coffee bar and rooftop lounge as well as private event space for weddings, business meetings and community events.

Built in 1968, this gem of mid-century modern architecture originally housed the headquarters of the Home Savings and Loan Association. The original design by architect Perry C. Langston inspired the renovations done in 2015 by Raleigh-based Maurer Architecture and Los Angeles-based interior design firm, Commune. The renovations preserved much of the building’s character and 1960s charm. The original mid-century facade with its distinct gold accents remains. The huge retail bank floor on the main level became the dining room illuminated by original two story floor-to-ceiling windows. The curvilinear mezzanine with a view of the dining room once housed offices, including for the bank’s president and vice president, and now offers private event space. The bank’s original safe door, along with its massive hinges and dials, anchors the main level’s bar.

Commune revamped the interiors with chic period design, including custom geometric carpet in the coffee bar, custom Moroccan tiles creating a grand entrance to the hotel lobby and custom chandeliers inspired by Yoshir Tanaguchi’s light fixtures in the lobby at the Okura Hotel in Tokyo. A rooftop lounge was added with one-of-a-kind panoramic views of the city’s center. The guest rooms are made warm and welcoming with custom-made modern furniture, lighting and amenities. The Durham forged collaborations with many local businesses to offer a unique guest experience, including bespoke blankets made by Raleigh Denim, in-room Counter Culture coffee service.

Other guest amenities include a business center, fitness facility, and newsstand, which is home to a permanent installation of the LIBERATION STATION Black Lit Library®. The library features children’s books highlighting characters of color. Guests and visitors are invited to choose a book and bring it inside the lobby to read in a comfortable space.

The hotel’s crowning jewel is The Roof at The Durham, a rooftop lounge with an indoor bar as well as covered and open-air seating that has become a year-round destination for guests and locals alike. The Roof at The Durham features a menu of snacks and small plates, as well as craft cocktails, wine and local beers. The Roof also hosts all manner of events, from rooftop yoga classes, stargazing nights, children storytimes, author readings and live music curated by well-known Durham jazz musician Al Strong.
