Direct and assist the stewards’ daily operations. Maintaining and monitoring equipment and equipment storeroom and pars on glass, chinaware and silver. Additionally, the Stewarding Manager is responsible for positively managing the stewarding team and coaching and training them as needed.
Support all outlets by transporting and ensuring adequate stock. Reports to the Executive Chef, and will work alongside the Director of Outlets, Beverage Director and Director of Banquets to control labor and operating expenses through effective scheduling budgeting, purchasing decisions, and inventory
Essential Functions
Maintain clean and sanitary work area
Check and report any equipment malfunctioning or failures
Oversee general cleaning and organization of all kitchen and adjacent areas
Responsible for training and supervision of all stewarding personnel
Ensure proper and safe use of all cleaning chemicals
Ensure kitchen cleanliness-directly working with Chef
Inform Chef of any product shortages of equipment or chemicals
Communicate stewarding needs or discrepancies to Executive Chef daily
Maintain and have positive inventory control of kitchen assets (e.g., chinaware, silverware, glass equipment, cleaning materials).
Ensure proper staffing and organization
Lead by example through hard work and positive attitude
Take sense of ownership over the stewarding areas
Maintain stewarding labor costs
Delegate responsibilities to stewarding staff
Consistently follow up with 3rd shift cleaners ensuring kitchen cleanliness
Attend weekly BEO meetings
Complete weekly stewarding schedule
Minimize breakage by ensuring all equipment is properly taken care of
Coordinate deep cleaning schedule for stewarding department
Practice proper recycling procedures and kitchen energy management
Control waste, be aware of the costs attached to the area of responsibility
Check out with Chef or Sous Chef on duty before leaving
Actively participates in Safety Programs and abides by all injury reporting and safety behavior requirements.
Participate in and support resort efforts towards community service, sustainability and environmental initiatives
Assists with other duties as needed which may include but are not limited to providing assistance with food dish-up, and cleaning
Must be able to work nights, weekends and holidays.

Qualifications
Required
Bachelor’s degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major.
Knowledge of basic computer functions, including Opera and Microsoft Word
Must have current and up to date San Diego County food handler’s card
Dedication to excellence with continued development of our resort reputation.
Ability to satisfactorily communicate in English with guests, management, and co-workers to their understanding.
Must have basic written and verbal communication skills both English and Spanish.
Desirable
Minimum 3 years prior Stewarding Manager experience
Prior working experience in a 5 star/5 diamond hotel
Stable work history
Physical Demands
Frequent or occasional need to perform the following physical activities: reaching, bending, pushing, pulling, twisting, lifting, and climbing. Have frequent need to perform standing and walking activities related to inspecting property.
Constant need to perform the following physical activities: grasping, turning, finger dexterity.
Occasional need to stand for long periods of time.
Lifting/carrying up to 10 lbs. frequently and 25 lbs. occasionally.
Vision requirements: constant need to view small print. Frequent need to see small details and things clearly beyond arms’ reach.
Hearing requirements: constant need to speak on telephone and/or two-way radio, respond to general public and converse with staff
. Ability to hear fire alarms and emergency equipment
Must be in good physical condition to stand for 8 consecutive hours, walk, kneel and lift a minimum of 50 pounds.
