Steward/Dishwasher

Overview:

This team memberis responsible formaintaininga high standard of cleanliness and sanitation in the kitchen. 

Responsibilities:

• Promptly and carefully sort soiledwareso that it can be put through the dish or pot machine properly. Quickly wash allwareandreplace instorage areas as designated. Keepdishmachineproperlycleanedand filled with water per hotel standards.

• De-tarnish/polish silver for proper appearance.

• Clean kettles, tilt skillets, pots and pans promptly and completely so cooks can carry out their work.

• Transport and clean cooking utensils and servicewarein order toprovide cooks, banquetserversand food servers withappropriate equipmentfor guests' dining experience.

• Performs duties tomaintainkitchen work areas and restaurant equipment and utensils in clean and orderlycondition.

• Sweep and mops floors.

• Washes worktable, walls, refrigerators, and meat blocks.

• Separates and removes trash and garbage and places it in designated containers.

• Steam-cleans or hoses-out garbage cans.

• Scrapesfood from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine.

• Runsglasses throughdishmachine twice.

• Putsaway androtatesstock.

• Putsaway all clean utensils andstockin designated areas.

• Cleaning and sanitizing all kitchen equipment, stoves, grills, prep tables, etc. 

• Cleaning and sanitizing all kitchenarea,floorsand walls. 

• Report inventory to supervisor for supplies and cleaning chemicals.

• Following safety guidelines and proper usage of all cleaning chemicals before, during and afterusagewhich includes proper storage of all chemicals when not in use.

• Reportat all timeswhen kitchen equipmentnotin working order to a supervisor/manager assigned.

• Assistkitchen staff when needed.

• Assist Stewarding Supervisor in organizing andmaintainingall inventories ofchina, glass & silver.

• Attend department meetings and othercompanyrequiredtrainings.

• Complete otherduties asassigned by management.

• Ability and willingness toworka varied schedule which includes working on weekends and holidays.

• Must have unexpired FoodHandlers –or obtain upon hire.

• Physical strength and stamina are essential to this position due to the high activity level. Must be able to lift/carry/push/pull up to 50 pounds.
