Salary Wage - $75,000 - $80,000 (BASED ON EXPERIENCE)
Responsible for the overall operation of all Outlets (Ladro Café’, Otium Grill & Greens, Altitude Sky Lounge, Mobile Dining and Banquets), to include, but not limited to hiring, training, scheduling and counseling of all staff members in these departments, the overall condition of the Outlets, Storage and Liquor rooms and banquet bars. Responsible to enforce all hotel policies including, but not limited to: employee appearance, attendance and punctuality, service standards and completion of job duties. Responsible to hold daily stand-ups and regular monthly/quarterly department meetings. Reports directly to the Food and Beverage Director. This position requires the manager to be on the floor of the restaurant/bar approximately 75% of the time. The manager is to assist with guest service in any way possible.

ESSENTIAL JOB DUTIES AND RESPONSIBILITIES
1. RESTAURANT, BEVERAGE AND MOBILE DINING OPERATIONS
a. Responsible for the organization of the liquor room and beer/wine cooler.
b. Maintain inventory log and Enforce policies regarding these areas including liquor requisitions.
c. Responsible for the liquor par levels in beverage areas.
d. Ensuring beverage staff members follow proper procedures for ordering and pouring.
e. Coordinate all aspects of large groups with reservations in all outlets.
f. Responsible for reservations on holidays.
g. Responsible for monthly beverage inventory.
h. Set up and monitor regular contests and promotions.
i. Assist with implementation of special promotions.
j. Conduct inspections of work areas regularly and address items that need attention.
2. STAFF MANAGEMENT
a. Hold a pre-shift meeting with staff prior to reporting to stations.
b. Be prepared for each daily activity and review any variations with management and staff.
c. Work shifts are covered with adequate staff, ensure correct staffing during peak periods and high occupancy.
d. Communicate daily with department managers and MOD to assure consistency and pass on pertinent information.
e. Consistently monitor the performance of associates on an on-going basis and provide feedback. Reward, discipline and document associate performance and provide timely counseling. Address associate complaints and resolve problems.
f. Supervise the staff and handle any associate situation.
g. Properly handle all administrative work with regard to interviewing, hiring, performance appraisals and terminations of staff.
h. Select qualified, goal and service-oriented individuals and develop these individuals with clear guidelines to associates.
i. Ensure staff is properly groomed and uniformed at all times.
j. Ensure work area cleanliness is maintained at all times. Issue daily and weekly cleaning assignments to include side work duties.
k. Maintain efficiency in the operation of the staff in a high standard of quality of service and courtesy, bringing total satisfaction to our guests and the hotel.
l. Maintain close control and inventory of uniforms, supplies, and equipment.
m. Prepare and post weekly schedules in accordance to guest needs and staff availability.
n. Conduct frequent hospitality audits to ensure the staff are conducting themselves in the manner appropriate for the department. Ensure Service Excellence Standards are in place.
o. Maintain a complete and accurate set of logs.
p. Prepare and submit accident or injury reports when needed.
q. Be a Team Player and encourage the teamwork attitude among staff.
r. Ensure all guests who experience a problem receive an appropriate response, any promised compensation is delivered, and an appropriate follow up in a timely and professional manner.
s. Carries out supervisory responsibilities in accordance with Hotel policy and applicable laws.
t. Plan, assign and direct work of associates.
u. Prepare payroll as required.
v. Promote open channels of communication between all hotel departments.
3. TRAINING
a. Ensure all associates are safety conscious and trained in safe work practices.
b. Have a thorough knowledge of hotel fire regulations and policy, accident reports, safety programs, and what the direct duties are in relation to each; ensure that all associates are properly trained in these procedures.
c. Implement proper training program and control the training of the staff to top efficiency and in accordance with Marriott policies.
d. Facilitate training.
e. Facilitate departmental training modules; continually monitor, evaluate, and revise training content to reflect changes in the process; address the needs identified by associates.
4. ADMINISTRATIVE
a. Accountable for the financial performance of the department.
b. Prepare and control hotel budget for the department.
c. Monitor departmental, payroll and supply expenses in accordance with budgetary goals.
d. Holds department meetings and attends inter-departmental meetings.
e. Be familiar with the operating procedures of all other areas of the hotel, cooperating fully and in a friendly manner with those areas to assure customer satisfaction.
f. Route associate commendations received from guests to the person responsible for assembling the daily packet.
g. Notify management of any pertinent information related to shift activities.
h. Determine the requirements for and the follow up on special groups, VIPs, etc.
i. Follow supervisor’s instructions and completes other duties as directed or assigned.
