Stewarding

Purpose:

This position is responsible for maintaining a high standard of cleanliness and sanitation within our food and beverage division. Stewards thoroughly wash and neatly store all the serving ware, cookware and utensils utilized in food preparation and service.

Essential Functions:

• Wash, rinse, sanitize, and properly store dishes, glassware, cookware, utensils, and kitchen equipment in accordance with established sanitation and food safety standards.
• Perform deep cleaning and routine maintenance of all walk-in coolers, freezers, and ice machines to ensure cleanliness, functionality, and food safety compliance.
• Clean and sanitize tilt skillets on a daily basis in accordance with sanitation and operational standards.
• Collect, remove, and properly dispose of trash, cardboard, and recyclable materials from all kitchen and food production areas.
• Operate pressure-washing equipment to clean designated kitchen, storage, dock, and operational areas as assigned.
• Conduct routine inspections of chemical storage areas to verify proper labeling, storage, handling, and compliance with safety standards.
• Change fryer oil and replace filtration systems throughout all culinary outlets according to established preventive maintenance schedules.
• Monitor, replenish, and maintain salt inventory levels to support uninterrupted operational needs.
• Clean, maintain, transport, and set up outdoor cooking equipment, including grills, flat tops, smokers, rotisseries, and other specialty culinary equipment as required.

• Ability to prioritize tasks and manage time effectively with minimal supervision.

Physical Requirements:

• Ability to regularly lift, carry, push, and pull up to 35 pounds, and occasionally up to 50 pounds.
• Ability to frequently bend, stoop, kneel, crouch, and reach overhead while performing cleaning and maintenance tasks.
• Physical stamina to perform repetitive movements and remain standing during shifts up to 10 hours in duration.
• Ability to work in varying temperatures, including walk-in coolers, freezers, kitchens, and outdoor environments.
• Ability to hear, understand, and respond effectively to instructions, team members, and operational needs in a fast-paced and sometimes noisy environment.
