Award-winning Dallas delicatessen seeks full time Head Baker to oversee our bread and pastry production.

What you will be doing
Trades Delicatessen bakes from scratch the baguettes, sourdough loaves, potato buns, and bagels used for our sandwiches. The Head Baker oversees bread and pastry production, maintains pars, minimizes waste, and ensures we are producing top quality products for Trades and our wholesale accounts. Trades also bakes a variety of pastries, cookies, and sweet treats for our pastry case, which requires ideation and recipe development by the Head Baker.

About the company
Trades Delicatessen is an award winning, from-scratch deli based in the Bishop Arts District of Dallas, Texas. What sets Trades Deli apart is that we bake our breads, bagels, pastries, and sweets from scratch and smoke our own meats, using local ingredients whenever possible. Our inspiration came from Italy, New York, and Southern California, where we have enjoyed some of the best bagels and sandwiches throughout our travels.
In addition to baking all our breads and smoking our meats, we roast our own coffee right here in the deli, as well as brew beer in our brewpub, Jaquval, which is adjacent to the deli.
Trades is a quick service restaurant with a large lunch volume from walk in guests and online orders. We offer catering that is primarily geared towards offices and meetings. Trades is also the coffee, bread, and smoked meat provider for our sister restaurants -- Oddfellows, Revelers Hall, and Jaquval.

Trades Delicatessen is a concept owned and operated by Cowan Roberts, a small hospitality and marketing firm centralized in Dallas. Its sister concepts include Oddfellows (2010), Revelers Hall (2019), and Jaquval Brewing (2023), all located in the Bishop Arts District.
