Position Title: Assistant Manager

Reports To: General Manager 


Job Summary

The Assistant Resort Manager is responsible for the oversight and management of all front of house Bar & Restaurant and Hotel divisions at the Resort and provides daily operational support to the General Manager. This position ensures that guest needs are met and the Resort staff are trained and managed to deliver service in keeping with our Company’s ‘JEM Way’ compliance standards. Continual development of the team shall ensure we exceed guest expectations and truly enhance memories of their vacation experience, keeping them coming back to us year after year. 

Maintaining efficient scheduling and duties for all divisions to ensure labor and operating costs are kept within budgets and productivity is being maximized is an essential over-arching driver of this role, to support company goals. In addition to the ensuring that day-to-day guest service functions are being performed to company standard, this role will operate as Manager on Duty in times when the Resort Manager is absent from the property.  Specific duties and responsibilities include:


Key responsibilities:

• Manage all guest service operations and team members. Build staffing schedules to accommodate peak check-in/out periods and develop systems to accommodate these processes with greater efficiency. Maximize team member productivity through concierge and enhanced service programs in a continual effort to elevate the guest experience.

• Plan, schedule and manage the rooms division team to efficiently manage “turn days”, ensure daily room inspections are made for quality assurance and all guest requests including room types, dietary and allergen requests and communicated effectively. Maintain an efficient laundry room program and ensure the cleanliness of all public areas are kept to a high standard.

• Manage an established system to control the access and distribution of all front of house provisions including but not limited to; retail merchandize, in-room guest amenities, bar inventory, housekeeping supplies. 

• Manage restaurant server and bar service teams. Build staffing schedules to ensure peak daily periods are covered and that schedules can “flex” to accommodate higher and lower occupancy weeks. Maximize team member productivity through enhanced service programs in a continual effort to elevate the guest experience.

• Approve restocking orders for all bar inventory items, including liquor, wine, beer, soft drinks, mixers and bar supplies. Ensure that bar inventory is well controlled and that monthly inventories are recorded accurately.

• Oversee the nightly bar entertainment schedule to ensure the quality and variety of nightly activities. 

• Assist the Resort Manager with any custom events held on or off-property, attention to banquet event order oversight and team-member participation and management thereof is essential to the success of our sought-after events.

• Conduct regular briefings and training in keeping with brand management objectives with operational departments and team members to gain feedback on service levels. 

• Assist the General Manager with Human Resource components as it pertains to temporary and work permit grant applications. 

• Perform scheduled performance reviews and training sessions with your direct reports to develop a learning culture 

• Perform coaching and disciplinary sessions with team members, fully documenting the situation and corrective actions discussed with the employee for inclusion in the employee file. 

• Assist the General Manager to fulfill necessary steps needed to manage out team-members in accordance with company and local labor board regulations, for team-members not meeting company requirements.

Job Requirements


Qualifications & Abilities

• Prior experience in Dive Resort Hospitality is an asset

• A positive, outgoing and guest focused attitude

• Must possess strong, comprehensive PC skills (i.e., Microsoft Word, Excel, Outlook products) and be comfortable with software programs that are part of our front of house systems (RDP, Micros, Yellow Dog and others that may change from time to time)

• Ability to work quickly and accurately under time constraints

• Must possess strong organizational and problem-solving skills, be a self-starter, be detail oriented, and have effective written and verbal communicate skills

• Ability to interact with all levels of management and vendors in a manner that results in the cooperation of all parties.

It’s no secret that Chef’s food also tastes every bit as delicious as it looks. Chef Guna honed and perfected his skills at Royal Caribbean Cruise Line where he was named employee of the year, at the Marriott Dubai, and at several restaurants on Grand Cayman before joining the team at Cobalt Coast as Head Chef. He combines fresh ingredients and seasonings to create excellent taste, flavors, and smells so guests leave feeling as if they’ve feasted with all of their senses. When not working, Chef Guna uses the Internet to communicate with his family back in India or heads to Grand Cayman’s beaches to relax in the beauty of the Caribbean.
IngridRestaurant Team LeaderIngrid is from Montego Bay, Jamaica, and entered the hospitality industry there as a personal concierge for families staying at the resort where she worked. She had to be an expert in all aspects of caring for tourists, because that’s what was expected of her. Her goal is to make all of our guests feel very special so they enjoy their vacation to the fullest and come back again and again.... Ingrid excelled at singing, drama, and netball (similar to basketball) while in school and now has four children. Since arriving on Little Cayman, she has made many really big life changes. Ingrid has learned to ride a bike and drive. She has also learned to swim and snorkel and just recently became a certified diver!
RafiBartender & ServerMeet Rafi Bartender at Little Cayman Beach Resort. To him, the label “bartender” is no more accurate at describing his skill than “nice water” describes our Cayman Caribbean. Rafi has elevated making cocktails to an art form with the fine-tuned flair of flipping bottles and the “hand magic” he employs while making special drinks. His father worked in the hotel industry, which inspired Rafi to make hospitality his own career. At 14, he started working in a hotel kitchen, and after further education and training, he became a server, then a bartender, and ultimately a mixologist who blends entertainment into creating and serving drinks. Rafi has won awards for his skill, including a recent third-place finish in the Taste of Cayman with his own Rapture of the Deep concoction. “I just want guests to feel happy,” said Rafi, who is also an expert at making classic cocktails of the 70s and 80s. “Besides getting better at my craft, I want to learn to swim and explore this beautiful underwater world here on Little Cayman.”
RachelleGuest Services Team-memberAs a part of the Guest Services Team, I always believe that I am the face of the Company as we are the very first point of contact for all new and repeat guests. We must have friendly smiling faces, a talent for multitasking and superb organizational skills. We perform essential duties such as greet and welcome the guests, ensure a seamless check in and check out, answer all guest’s queries, emails and incoming calls and a whole lot more! As my role is the key to the Front of House Hotel experience I anticipate my daily tasks may involve other guest service tasks such as concierge assistance and even greeting and performing hostess duties in the Restaurants.
