Chef De Partie, Line Cooks, Pastry Cooks and Stewards report to the Sous Chef.
Standardize food preparation to ensure quality.
Ensure compliance with health code regulations.
Control food waste.
Control utilization or storage of food surpluses and leftovers.
Ensure food labeled and stored properly.
Supervise cooking personnel.
Recruit, retain and promote staff.
Prepare staff work schedules.
Train, coach and counsel staff with culinary instructions, demonstrations and kitchen equipment.
Ensure staff appearance standards met.
Conduct frequent meetings with staff to motivate and answer staff issues.
Discipline, demote, transfer and terminate staff.
Approve time sheets.
Maintain labor costs within budget.
Maintain record of actions taken.
Comply with all labor laws.
Ordering, receiving, storage and inventory:
Calculate required supplies and maintain par quantities.
Supervise storage labeling and storage location.
Monitor food costs.
Supervise inventory counts.
Ensure equipment maintenance.
Ensure adequate equipment supplies.
Health and Safety:
Promote safety, comply with Fire Regulations.
Maintain proper sanitation.
Supervise sanitation personnel.
Must regularly lift and / or move up to 25 pounds.
Required to stand; walk; use hands to finger, handle or feel; reach with hands and arms; talk to hear and taste or smell.
Occasionally exposed to fumes or airborne particles and extreme heat.
Noise level in the work environment is usually loud.FOH:
Maintain good working relationships with the General Manager, Restaurant Managers, Servers and support staff.
