Purpose of the position is to manage Ember and Vine and other outlets of the hotel, and to provide an exceptional dining experience to our guests.  The Director of Resturant and Other Outlet Operations provideds key leadership and direction to the food and beverage team.


The primary responsibilities of the Director of Resturant and Other Outlet Operations, are to:

  • Deliver prompt, courteous guest service in a maner which complies with the DoubleTree by Hilton standards and policies
  • Monitor guest satisdaction and comments regarding Ember and Vine Resturant and other outlet operations
  • Verify Ember and Vine’s artistic presentation of the food and its quality 
  • Create and preserve a inviting physical atmosphere and clenlieness of Ember and Vine Resturant and other outlets.
  • Mantian food displays during service hours
  • Overall presentation of Ember and Vine Resturant set to meet hotel and brand specifications
  • Ember and Vine Resturant, equipment and processes are in excellent condition
  • Maintain and adhere to the monthly budget ourtlined by corporate and controller
  • Uphold Ember and Vine Bar controls/ other outlets and proceedures including but not limited to the cost of beverage(s), beverage requisitioning, food requisitioning, and end of the month inventory
  • Develop and maintain the monthly and weekly volume forcast reports to be presented to DoubleTree by Hilton - Cranberry General Manager
  • Ensure the training, management, and appearance of all restaurant staff including but not limited to brand standard training, positive up-selling techniques, turn over and table resetting
  • Cultivate a employee weekly schedule which meets the needs of the business and provides employe satisfaction
  • Primary stakeholder in ensureing all Ember and Vine Resturant and other outlet sales promotions and merchandising programs are executed and successful
  • Enforce all policies related to liquor liability laws and follow hotel beverage related procedures
  • Responsible for employee payroll forcast and computation (unifocus)
  • Enthusiastic in developing a positive team culture and eager to support the Ember and Vine Resturant and other outlet team with cashier, bussing, etc. if nessesary
  • Accountable for maintaining and following check control, hourse charges,  
  • Other support functions as requested and directed by DoubleTree General Manager 

Qualifications and Skills

Your success will be determined by your demonstration of our company CARE principles. More specifically related to this position, DoubleTree by Hilton - Cranberry seeks an applicant who possesses the following:

  • Two plus years of Director level restaurant support in a high volume environment
  • Proven experience in enhancing the efficiency and satisfaction in the restaurant/ hospitality industry
  • High energy individual with ambition to lead and guide a strong restaurant and beverage team
  • Must have a successful track records leading operations and meeting budgetary sales and profitability objectives
  • Strong ability to analyze data, execute on projects, diagnose issues and coach the restaurant operations team accordingly 
  • Extraordinary communicator with a great aptitude for influencing others
  • Must be willing to learn and adapt as necessary implement industry and company wide changes
  • Restaurant/ hotel multi-unit hospitality experience preferred 
  • Bachelor’s degree preferred
