Responsible for all aspects of managing the kitchen and kitchen personnel, ensuring the quality preparation of all menu items and proper handlingstorage of all food items in accordance with standards. Coordinate the purchase of all food and maintain menus, maintaining approved food costs
and labor costs.


1. Establish the days priorities and assign production and preparation tasks for staff to execute.

2. create daily menu specials and receive feedback from Executive Chef.

3. Review banquet event orders and make note of any changes.

4. Communicate both verbally and in writing to provide clear direction to staff.

5. Take physical inventory of specified food items for daily inventory.

6. Requisition the days supplies and ensure that they are received and stored correctly. Communicate needs with Purchasing and Storeroom personnel. Ensure quality of products received.

7. Meet with the Steward to review equipment needs, banquet plate up assistance, cleaning scheduleproject status, healthsafety and sanitation follow up.

8. Ensure that each kitchen work area is stocked with specified tools, supplies and equipment to meet the business demand.

9. Ensure that recipe cards, production schedules, plating guides, photographs are current and posted.

10. Assist The Executive Chef in menu development and execution.


1. Prior tenure of at least 1.5 years in a Sous Chef position.

2. Prior experience with managing 8 associates at one time, in a culinary environment.

3. Must provide documentation of steady and measured advancement to a Sous Chef position

1. Formal culinary training a plus, though not required.

2. Basic Word computer skills are required. Advanced computer abilities an added plus though not required.
