Position is responsible to assist Exec Chef in kitchen operations, this position directly reports to Exec Chef.
Leading the staff, ensuring consistent quality and delivery.
Making sure that food , Sanitation and Company standards are met.
Hands on position that requires overseeing food preparation areas ( Banquets, restaurants, room service, associate cafeteria and pool bar )
Develop, train and motivate staff. Provide direction and support to the staff in setting and following specs.
Encourage and build key associates as role models.
Administer policies fairly and consistently.
Monitor and maintain safe operations of all equipment following operational guidelines.
Be part of progressive disciplinary process as well as performance appraisal, maintain documentation.
Understand scheduling and labor cost.
Understand and participate in inventory and maintain consistency.
Able to work flexible hours
Minimum of three year culinary experience and in addition two year supervisory experience, hotel experience preferred
Positive attitude and a good role model
Knowledge of food safety, state laws, labor laws
State required management food handling certification
Good communication skills
Professional appearance and demeanor
Ability to speak, read and write English
Ability to stand, walk for long periods of time through out the shift
Ability to frequently lift / carry up to 50 lb in weight
Understand food cost, scheduling, inventory and purchasing
Must have basic computer use skills
Skilled to interact with guests as needed
