Job Description:

To provide and maintain high quality standards and procedures in preparing and serving all banquet food. Technically a sound and fluid banquet cook.

Responsibilities:

* Responsible for daily preparation of foods listed on BEO’s or daily prep sheets, according to standard procedures or otherwise instructed by Banquet Kitchen Supervisor, Sous Chef or Banquet Chef.
* Maintain a high quality of standards for food preparation and presentation at all times. Inspect all food products for quality when doing production.
* Check quality, portion control, weights and counts prior to all functions.
* Maintain all standards relating to fire times on all food in accordance to 30 minute SOP for the banquet department.
* Maintain/check cooking times and temperatures of all food products.
* Serve as a mentor and guide for other Banquet Cooks to ensure all timelines and quality standards are met.
* Follow all safe food handling and storage procedures relating to all food items including transportation, hot and cold holding of foods, or when time is used in lieu of temperature (TILT).
* Maintain cleanliness of work area at all times including upkeep of all walk-in coolers/ freezers and dry storage.
* Help maintain and keep the banquet kitchen including but not limited to the: walk-ins, prep areas and equipment up to local health department standards at all time.
* Help ensure all required hot food/ cold food/ temperature logs for EcoSure are kept up at all times. Assist Supervisor or Sous Chef with weekly and monthly food safety self audits.
* May be needed to assist with daily banquet requisitions for supplies and or food items for production.
* May be asked to help with daily production sheets for hot side or cold side banquets in the absence of the Banquet Kitchen Supervisor/ Banquet Sous Chef or Banquet Chef.
* Assist in putting away and proper rotation of all daily orders/ requisitions of food products.

Qualifications:

* Minimum 3 years relevant culinary experience, preferably in high volume upscale hotel banquet operation. Thorough knowledge of food handling, preparation techniques and cooking techniques including but not limited to (Braising, Sauté, Baking, Roasting, Poaching, Grilling, Steaming and frying).
* Must be able to read a recipe and scale up or down if needed.
* Must have a good understating of basic meat and seafood fabrication. Can successfully clean a whole beef tenderloin 189a PSMO and a whole fresh salmon with minimal guidance.
* Must have a good understating of basic sauce and stock production. Basic Vinaigrette and or dressing production. Understand how to emulsify a sauce or vinaigrette. Have a good understanding on how to properly thicken a sauce or stock.
* Basic math skills needed to understand and implement recipes and measurements. Ability to convert small batch recipes into large batch recipes if needed.
* Good eye/hand coordination needed to use all kitchen equipment.
* Ability to work cohesively with co-workers both within and outside of your department.
* Ability to handle stressful situations, while maintaining a calm and welcoming demeanor.
* Requires a working knowledge of sanitation standards. Highly motivated self starter focused on quality, organization, cleanliness and teamwork.
* The ability to work in a fast paced high pressure work environment while executing delegated tasks and assignments.
* Ability to prioritize, organize and follow up.
* Ability to produce high volumes of work while maintaining quality per Omni standards.
* Desire to lead others and participate in supervisory development program.
* Requires a working knowledge of local, state and federal sanitation standards. ServeSafe certified is preferred.
* Understands ready to eat foods and the use of gloves in the kitchen per the state of Tennessee Environmental Health Department Food Code.
* Has a good grasp of major food allergens (Wheat, Soy, Dairy, Peanut, Shellfish, etc)
* Have the ability to answer guest questions on Celiac or Gluten Free diets
* Culinary degree and/or formal training preferred.
* The ability to stand/walk for long periods of time and lift/carry/push/pull up to 50 pounds. Requires repetitive motion with both hands and occasional bending/stooping/kneeling.
* Must be able to utilize culinary tools (knives, commercial equipment, etc) and taste/smell.
* Flexible schedule to include nights, weekends, and holidays.
