Position Details

Mandarin Oriental, Las Vegas is a sophisticated luxury hotel and residences prominently located at the entrance of CityCenter, a magnificent urban resort destination at the heart of the Las Vegas Strip. Duties & Supporting Responsibilities:

  • Lead and provide essential vision to the stewarding operation
  • Attend the BEO (Banquet Event Order) meeting
  • Develop yearly budget (Labor, China, glassware, Silverware, Operating Supply, Kitchen Supply)
  • Create monthly stewarding forecast to ensure proper inventory and staffing
  • Monitor payroll and manage relationship with outsources staffing agency
  • Manage Relationship with kitchen cleaning vendors in overnights (Excel)
  • Develop weekly schedules
  • Develop and facilitate cleaning schedules
  • Develop and maintain sanitation and cleaning records pertaining to FLHSS&E program
  • Attend to all employee comments and complaints thru Colleague Engagements Survey
  • Track inventory for all glassware, silverware, and china
  • Ordering of all operating and cleaning supply on a weekly basis
  • Manage visit and follow up with Southern Nevada Health District and maintain Grades posting and permits
  • Maintain and implement hotel pest control records including F&B binder
  • Conduct weekly walk thru of all the F&B outlets
  • Organize and track record of stewarding meeting with the F&B Director and Executive Chef
  • Organize and supervise outside catering events



  • Minimum of 5 years experience managing a luxury hotel stewarding operation
  • Bachelor's degree in hospitality management, culinary or other related area
  • Strong verbal and written communication skills in the English language
  • Working knowledge of stewarding and beverage operation
  • Knowledge of kitchen equipment
  • Ability to stand and/or walk for 12 hours a day
  • Ability to lift or carry 20-100 lbs on a frequent basis
  • Ability to perform all duties in extreme temperatures
  • Have a strong sense of responsibility to maintain costs and FLHSS&E standards set forth by the company
  • Be responsible for achieving and exceeding colleague satisfaction scores


  • Multi-lingual in English & Spanish
