Job Description

The Magnolia Hotel & Spa is Victoria's premier luxury boutique hotel, recently voted #1 City Hotel in Canada by readers of Travel + Leisure Magazine.

Located steps away from Victoria's Inner Harbour the Magnolia has built its reputation on exceptional and personalized service in a luxurious boutique hotel environment. We are looking for passionate and inspired candidates to join us early in 2018 as we launch a new and exciting Restaurant & Bar.

The opening kitchen team will be critical in quickly establishing the culinary reputation for what will be one of Victoria’s most exciting new restaurants.

We are currently recruiting for an Executive Sous Chef.  Sous Chefs assist in managing the kitchen and ensuring the flow of service is efficient and smooth. Sous Chefs will have the opportunity to create and have input on new menu creations. A key responsibility will be mentoring, training and supervising staff.

Kitchen Responsibilities:

  • Monitor and ensure that standard kitchen operating procedures are met.

  • Lead by example to cultivate an honest, fun and ambitious kitchen culture.

  • Manage all kitchen employees including training, mentoring, and supervising staff.

  • Support and manage prep for service; ensure all prep items and recipes are made to standard.

  • Oversee the line during service while monitoring cooks’ progress and flow of service.

  • Oversee the flow of the kitchen and the flow of food to maintain service standards.

  • Working with the Executive Chef on menu creations and fresh sheet specials.

  • Assist in interviewing, selecting and onboarding all BOH hourly new hires.

  • Assist monitoring the receiving of all product to ensure it meets restaurant standards.

  • In partnership with the Executive Chef, develop new menu items and ensure proper execution and roll out of any new additions.


    Administrative:

  • Monitor schedule and labour costs to ensure standards and goals are met.
  • Manage inventory and costs with the Executive Chef and management team.
  • Support staffing needs.
  • Complete service logs to ensure proper communication of any relevant issues.

 

Job Requirements

Job Requirements:

  • Post-Secondary culinary education an asset.
  • Previous experience in similar roles within a high end kitchen preferred.
  • 2 years + high end hotel and/or restaurant management experience preferred.
