The Westin Mt Laurel is a 175 room hotel offering 20,000 square feet of beautifully appointed Catering and Meeting facilities that includes the Grand and Regency Ballrooms, five breakout rooms and an Executive Boardroom. Job Description and Responsibilities
*Work with and direct the culinary team on a daily basis insuring the highest standards through direct oversight and continual training.
*Set and enforce quality, presentation and productivity standards for department.
*Effectively manage all aspects of the culinary department with regards to food cost, effective labor management and cleanliness.
*Developing a close rapport and strong working relationship with the Catering Sales team to ensure that the guest needs met. Design special menus as required to meet special requests.
*Conduct menu tastings
*Coordinate with the Banquet Manager to insure the smooth execution of all Catered events.
*Work with Bellagio Lead Cook and Front of House managers to ensure that the quality of product meets the established recipe standards.
*Negotiate with vendors to insure that the hotel is receiving a quality product at a competitive price.
*Performing end of month inventories and reconciling food cost.
*Minimum of three years experience in the position of Executive Chef in a hotel culinary environment with a strong reputation in the local community for social catering and ala Carte dining.
*Excellent leadership and training skills.
*Excellent written and oral communication skills.
*Ability to work and thrive in a team atmosphere.
*Ability to multi task in a fast paced environment and successfully coordinate the serving of simultaneous high end events.
*A positive and winning attitude.
