Purpose:

To report to and the Executive Pastry Chef and assist the pastry team in the coordination of all desserts and bakery items prepared. To assist in the preparation of Bread, Rolls, Breakfast Pastries, and other baked goods for the Fairmont Scottsdale Princess Guest, outlets and banquet functions.  To uphold and assure compliance with all company and departmental policies and procedures


Responsibilities:

  • To assist in the preparation and baking of dough, cookies, muffins, dough, sponges, custards, meringues, mousse, icing, and other pastries.  Able to store and handle all baked goods.

  • Assist with the set up of banquet functions, outlet orders, and breakfast production.

  • Monitor and maintain sanitation standards.  Monitor and maintain safety standards

  • Completes task as assigned by supervisor

  • knowledge of custards, cookies, mousse, sponges, meringues, and icings.

  • Knowledge of mixing methods; creaming, whipping, folding.

  • Knowledge of finishing methods and techniques.

  • Basic celebration cake building and icing.

  • Knowledge of various dough.

  • Basic knife skills for chopping, cutting, dicing, etc.

  • Understanding of basic Pastry Kitchen terminology.

Qualifications:

  • Two to Four Years of Previous Experience in a Pastry Production Kitchen and/or Restaurant Experience
  • Diploma Certification in a Culinary discipline an asset
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times 

Physical Aspects of Position (include but are not limited to): 

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing, pulling
  • Occasional ascending or descending ladders, stairs and ramps
  • Can work outside in extreme Heat and in Extreme Cold
  • Can work in Wet conditions, Odor, Noise, and Stressful conditions
