POSITION GUIDELINES

POSITION TITLE: Cook II Stillwater’s hot side

EXEMPT/NON-EXEMPT: Non-exempt

DIVISION/DEPARTMENT: Kitchen

REPORTS TO (TITLE): Executive Chef, Chef D’ Cuisine, Sous Chef, Lead Cook

SUPERVISES: N/A

POSITION SUMMARY

A Cook II is responsible for preparing vegetables, starches and meats, basic soups and sauces. Additional responsibilities include knowledge of basic culinary skills and ability to set up for buffets and banquets. A Cook II should possess basic culinary skills and the ability to work quickly and efficiently while maintaining cleanliness in the department.

ESSENTIAL FUNCTIONS OF THE POSITION


1. Support skilled positions by following written instructions and recipes and completing tasks in a timely manner.
2. Learn and be able to use products to their full potential minimizing waste.
3. Broil, sauté, root, and poach meats and fish. Wash, peel and cut vegetables.
4. Inventory par stocks and order appropriate quantities of food for upcoming business.
5. Prepare pastas, rice, potatoes and other starches.
6. Cook sauces, soups and stocks.
7. Comply with all sanitation standards and health department regulations as outlined in training manual.
8. To be trained the policies and procedures of sanitation.
9. To be train in the proper use of chemicals in the kitchen.
10. Must be at station in uniform ready to work at the time shift starts.
11. Must comply with grooming standards as outline in Hourly Employee Handbook and training manual for kitchen employees, hair must be restrained and there is no jewelry allowed.
12. Must wear proper uniform as provided by Stonewall Resort. at all times. Must wear black, non-skid type shoes provided by employee.
13. Must leave work area clean and sanitized at end of each shift.
14. Carry out the policies and procedures of The Stonewall Resort and Benchmark Hospitality Group while maintaining the highest degree of professionalism and teamwork atmosphere as per standards of service.
15. Follow safety procedures to ensure a safe working environment.
16. Provide assistance in other job classification as determined necessary by immediate superior.

EDUCATION, EXPERIENCE AND SKILLS REQUIRED

Must be able to communicate with supervisors and peers, must be of legal age to operate kitchen machinery (slicers, grinders, sheeters, mixers). Must possess advanced prep skills, must comply with qualifications for Cook III.
