*Performs any necessary pre-shift sidework.
*Becomes thoroughly familiar with all items on the buffet and means of preparation being offered that day, including the ingredients, preparation, and garnishes.
*Ensures buffet and dining room are properly set up and cleaned.
*Sets up hot and cold stations, displaying food in an aesthetic manner.
*Maintains constant communication with kitchen in order to replenish all hot and cold food in an appetizing display.
*Returns empty chafing dish pans to the pot wash area and those with food to the kitchen hot line.
*Anticipates guests’ needs.
*Practices “clean as you go” techniques of service by keeping the buffet, dining rooms, and station clean, neat, and supplied at all times.
*Decorates the buffet and dining with seasonal decorations if necessary.
*Completes assigned side work and resets tables for the next guest and following day.
*Acts as a hostess with our guests to welcome them to the buffet, offering available seating, bussing empty dishes while they are dining, and promptly busses tables when the guest has left.
