The Catering Manager is an energetic, firm, fair and flexible leader who supervises, co-ordinates, directs and administers all of the phases related to the smooth and profitable operation of the catering department.

RESPONSIBILITIES:

  • Takes responsibility to generate revenue for the Catering Department. 
  • Implements industry best practice for maximum profitability for the Hotel operation.
  • Communicates effectively with the General Manager, Sales Manager  and  Food & Beverage Manager  for exemplary product or service delivery
  • Is cost conscious and maintains control over billing inventory and departmental expenses
  • Understands the marketing plan and catering operating budget and strives to meet and exceed forecasted standards
  • Is visible and accessible to clients and associates
  • Works with the management team to develop service and profit oriented goals for the hotel
  • Uses time efficiently, organizes catering staff schedule
  • Is familiar with the facilities, rates and menus of the competitors
  • Is neat in appearance, demeanour and sets an example for the employees and a standard for the image of the hotel
  • Is active in community affairs & associations that contribute to the support of the hotel/s profile in the market place

DAILY DUTIES:

  • Establishes contact with the organizer of each function
  • Records all client interactions in Delphi, manages Delphi reporting
  • Overseas room changes and introduces function clients to Catering Supervisor
  • Obtains catering contracts through telephone inquiries, site inspections, convention referral business, and public relations
  • Ensures billing of functions are correctly charged and paid for in accordance with Hotel's credit policy
  • Reconciles banquet invoices
  • Follows up on any accounting queries and problems
  • Manages reactive guestroom sales for Weddings and Christmas Parties
  • Communicates guaranteed numbers and last minute changes for events

WEEKLY DUTIES:

  • Communicates with the General Manager and F&B Manager concerns with quality of produce or service
  • Meets with F&B team to co-ordinate catering report details
  • Follows up with past week events to ensure expectations were met
  • Assumes the duties and responsibilities of a Duty Manager as required
  • Monitors tentative bookings
  • Generates weekly Audio/Visual Order

Job Requirements

 

QUALIFICATIONS:

  • Advanced knowledge of industry best practice in Catering Sales
  • 5 years of sales experience in hospitality industry
  • Experience in catering department
  • Post-secondary education in sales or equivalent
  • Computer literacy (excel, word, group booking systems, internet, email etc.)
  • Highly energetic, aggressive self-starter
  • Strong organization skills and detail oriented
  • Commitment to superior customer service
  • Works well under pressure
