Beverage Manager

Position Summary

 

Bank & Bourbon seeks a Beverage Manager to join our exciting restaurant.  Designed by nationally recognized design firm Meyer Davis and housed in the iconic PSFS Building Bank & Bourbon delivers one of the most memorable and  unique dining experiences in Philadelphia. 

Much as the head chef drives the culinary output and aspirations of the kitchen, the Beverage Manager is the master mind behind the bar. Bank & Bourbon offers a barrel-aging program alongside classic cocktails and modern interpretations, an impressive collection of local and regional whiskeys, and a carefully-curated craft beer & wine list.  We seek a leader who is highly motivated, creative, and passionate about their craft, providing trend settings ideas and writing recipes for the bar’s hand-crafted cocktails and driving our unique on-site barrel-aging program.  The Bourbon Master will be an expert in regards to spirits, wine and beer and will serve as an educator to our guests and team members alike. 

  • Creates and maintains all beverage recipes, classics and signature, and ensures consistency in preparation amongst team
  • Conducts all Bank & Bourbon beverage inventories
  • Accountable to achieve targeted beverage cost for beer, wine and liquor
  • Illustrates and engages guests through understanding of whiskey, bourbon, and scotch
  • Trains and mentors all team members’ on wine, beer, spirit and cocktail knowledge, serving techniques, and ability to sell signature cocktails and house aged spirits.
  • Updates Beverage Menu as necessary and as the season dictates
  • Displays extensive knowledge of wine varietals and types of beer
  • Illustrates thorough understanding of whiskey, bourbon, and scotch
  • Train and coach restaurant servers on wine, beer, and cocktail knowledge, serving techniques, and ability to sell signature cocktails
  • Creates & maintains detailed recipes for all signature cocktails, updating as necessary and as the season dictates
  • Continuously evaluate all liquor, beer and wine selections
  • Establish and maintain pars for all beverage products
  • Make recommendations regarding glassware and equipment to stay at the forefront of beverage trends   
  • Continuously evaluate all spirits, beer and wine selections and ensures beverage menus are always up to date.
  • Establishes and maintains pars for all beverage products
  • Works seamlessly with purchasing department to ensure product is in stock and properly stored
  • Maintains POS System to ensure all items are in the system and priced appropriately.
  • Make recommendations regarding glassware and equipment to stay at the forefront of beverage trends
  • Creates daily prep list and side-work sheet for bar team and inspects work completed
  • Manages the in-house barrel aging process
  • Manages bourbon locker program
  • Provides sommelier service tableside in reference to spirits, beer and wine in the dining room, bar and lounge
  • Prepares all necessary mixers and garnishes prior to start of service and during ensures back-ups are placed in proper storage as necessary
  • Greets guests in a polite, professional manner according to Loews Standards
  • Illustrates high ideals of customer service, along with excellent communication skills
  • Engage guests in conversation regarding their stay, property services, and area attractions/offerings – “In the Know”
  • Determines guests needs and suggestively up-sells beverages so as to enhance the guest experience
  • Regularly closes the restaurant
  • Supports restaurant and beverage public relations opportunities
  • Organizes and conducts quarterly Bourbon Seminars and Bourbon Dinners for guests
  • Has daily beverage focus in pre-shift meeting and openly quizzes team
  • Determines guests needs and suggestively up-sells beverages so as to enhance the guest experience
  • Monitors guest to prevent over indulgence and ensure safety
  • Maintains and ensures cleanliness and sanitation of bar service area at all times
  • Completes end of shift revenue report and cash deposit

Required Skills and Experience

Specific Job Knowledge, Skills, and Abilities

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation:

  • Thorough knowledge of alcoholic beverages, cocktail recipes, preparation methods, garnishes, glassware, utensils/equipment, and service; legal aspects of alcoholic beverage service (TIPS Certified or ability to obtain)
  • Exceptional guest service skills
  • Basic computer skills
  • Ability to stand stoop, bend, and lift items weighing up to 50 pounds repetitively during entire shift
  • Ability to work flexible schedule to include weekends and holidays

 

Qualification Standards

Education:  High School diploma or equivalent experience.

 

Experience:  3+ years of prior experience training, mentoring and developing a strong Bar and Lounge Team, with the ability to motivate and drive performance from a large, diverse staff.

Experience in a high volume, upscale Bar/Lounge environment, or freestanding restaurant preferred.

Strong leadership, strategic management, organizational, and communication skills.

Expert knowledge of spirits, wine, beer and mixology.
