The primary responsibility of the Banquet Chef is to oversee and manage the banquet department on a daily basis, maintaining the vision and goals of the department as developed by the executive chef.
Duties and responsibilities
Maintain a teamwork orientation towards co-workers.
Adhere to all Viceroy policy and procedures.
Maintain the highest possible ethics, integrity and cooperation with co-workers in all departments of the Viceroy Snowmass.
Provide training, supervision and a positive attitude for the banquet department employees during all shifts.
Insure that the banquet department is well organized and prepared for business each shift
Plan and organize the preparation of all food items related to the banquets and employee meal during all shifts.
Assist with any food ordering as it pertains to banquets
Responsible for the correct storage, proper specification, and insuring that products are of top quality, fresh and presented in the proper manner.
Assisting when necessary in the set-up, planning, and cooking of restaurant food items.Must have solid knowledge of all stations in the kitchen.
Willing to cover any necessary Sous Chef shifts and assist with any special projects and necessary paperwork as it pertains to a kitchen manager
Ensure production station is in good order, clean and organized before production leaves.
Participate in any required meetings.
