| Job Description: | We are looking for a knowledgable, skilled and passionate Sous Chef that can help lead our Culinary team as well as anticipate, meet and exceed our guest's expectations which will "Turn moments into memories for our guests!"
Responsibilities: - Food quality, customer satisfaction, employee training and satisfaction, kitchen cleanliness, food cost and payroll cost control, safe working environment. - Delegation of kitchen work everyday, communicating with colleagues about business and specials, food quality and the timing of food, food presentation, food and payroll cost and the cleanliness of the kitchen. - Approach all encounters with guests and employees in a friendly, service oriented manner. - Maintain regular attendance in compliance with Fairmont Standards, as required by scheduling which will vary according to the needs of the hotel. - Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and name tag while working. - Comply at all times with Fairmont standards and regulations to encourage safe and efficient hotel operations. - Where appropriate give colleagues feedback - Take part in progressive corrective action where appropriate - Ensure overtime is kept to a minimum - Supervise all phases of food production and service directly related to all catering functions. - Ensure equipment and kitchen cleanliness. - Assure that all cooks have all food items prepared to proper specifications in a timely manner. - Maintain refrigerator and kitchen in clean, organized manner to facilitate the high volume production necessary to achieve company goals. - Maintain an effective training program for all employees so that all their time can be productive. - Keep production of food at an adequate level that does not result in excessive leftovers and waste. - Attend any meetings as required - Assist in completion of weekly payroll - Hold staff meetings, record the minutes and send to HR - Enforce the uniform appearance and personal cleanliness policy at all times. - Other duties as required |
| Job Requirements: | - Culinary degree preferred and at least 3 years experience at a management or supervisory level in a luxury hotel or fine dining restaurant.
- Use of electric slicer, buffalo chopper, cusinart mixer, Waring commercial blender, kitchen cutlery, ovens/ broilers, range tops, kettle steamer, Till fryer/ deep fryer, chafing dishes, salamander, scales, can opener, Carter Hoffman, meat grinder, cheese and vegetable shredder, Hobart mixer and chopper, vegetable steamer/ steam table, convection ovens, deck ovens. - Long hours sometimes may be required. Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force constantly to lift, carry, push, pull, or otherwise move objects. - Must be able to convey information and ideas clearly. - Must be able to evaluate and select among alternative courses of action quickly and accurately. - Must work well in stressful, high-pressure situations. - Must maintain composure and objectivity under pressure. - Must be effective at handling problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary. - Must have the ability to assimilate complex information, data, etc. from disparate sources and consider, adjust, or modify to meet the constraints of a particular need. - Must be effective at listening to understanding, and clarifying the concerns and issues raised by coworkers and guests. - Must be able to work with and understand financial information and data, and basic arithmetic functions - Must possess leadership skills - Preferred skills: second language, ServeSafe certification, and ice carving |
