Job Description

Job Overview:

 

Complete execution of high volume banquet production and operations.  As directed, the person in this position is responsible for execution of the hot foods including meats, fish, poultry, starches and vegetables, garde manger, and/or pastries for banquet operations. He/She needs to be able to follow the standardized recipes and ensure that food quality; portioning and presentation reflect the Cascade Resort's philosophy for fresh, healthful and innovative cuisine.

Essential Functions:

 

· To know and carry out policies and procedures set forth by The Vail Cascade Resort & Spa.

· To effectively communicate within the Guest Service Department.

· To assume duties and responsibilities delegated by Guest Service Management.

· Be safety and security conscious.

· Always be in proper uniform and comply with grooming standards.

· Sign in/out at beginning and end of shift and for lunch breaks.

· Prepare food according to standardized recipes and Cascade Hotel's standards.

· Plate food in the most appealing way possible and in accordance to our plating guide.

· Assists other chefs in the kitchen with preparation of food for the restaurant and banquets.

· Follow established health and safety standards.

· Store food items properly to ensure food safety.

· Maintain cleanliness of equipment and assigned work area(s).

· Immediately report maintenance deficiencies and report any loss or damage to food, fixtures, or equipment.

· Maintain schedule availability to provide the best assistance to the job related responsibilities to include but not limited to client expectations.

· Read, analyze, and follow established policies. 

· Attend and actively participate in the scheduled meetings.

· Maintain complete knowledge of recipes and manual systems.

· Maintain complete knowledge of equipment, kitchen layout, events, and related services.

· Other duties as assigned
