Job Description

Perform supervision of banquet service personnel and service of banquet events for the banquet manager and banquet sales coordinator. As leader of the service team, the captain is primarily responsible for ensuring that guests receive proper service, enjoy their meal, and want to return. The captain achieves this goal by providing the guest with the highest possible standard in service.

Duties and Responsibilities:

* Adhere to guest service requirement listed above
* Adhere to established department and property policies and procedures regarding guest service standards
* Maintains a positive attitude at all times, supporting the policies of Ameristar Casino
* Must maintain the strictest confidence of any and all confidential information disclosed by an Ameristar entity
* This is a uniformed position, which requires that team members are in compliance with uniformed appearance standards while on duty
* Be on duty prior to the start of event setup, in uniform, well groomed, and ready to go to work. Obtain copies of banquet event orders containing the menus and terms of service for each event. Learn names of banquet servers, bartenders, and housepersons on your team. Ensure that team members are ready to work, well groomed, in full uniform, mentally alert, and knowledgeable regarding policies, procedures, and banquet food and beverage menu items
* Ensure that the banquet room, including tables, chairs, carpeting, tray jacks, and side stations are clean, fully equipped, and neat. Correct placement, if necessary, of any tables and chairs. Dust or clean chair seats if necessary. Check side station for proper setup of silverware, china, condiments, coffee and teapots, water pitchers, salt and pepper dispensers, linens, and napkins
* Check tables for proper setup, with all silverware in a place setting parallel with each other with the handle ½ inch from the edge of the table. B&B plates placed above the tines of the entrée fork. Knife cutting edge pointing to the left. Coffee cup and saucer to the right of the spoon with the cup handle at 45 degrees. Table linen being of appropriate size and color for the event, in good conditions, not soiled stained, or torn
* Review banquet event order(s) for banquet food and beverage menu items being served for each event. Ensure that the banquet service team has completed all assigned pre-service responsibilities. Check that special menu items have been prepared (Hors d’ oeuvres, special event cake orders)
* Greet event contact, by name, and offer assistance with any guest or special setup needs
* Use seat designation system when the event requires more than one entrée selection Ensure that the servers use the correct seat designation numbers to serve the correct entrée to each guest. Ensure service team serves all courses in the proper sequence, in a prompt manner, and in accordance with service procedures. Make sure soiled wares are cleaned properly, from the right side of the guest, using the right hand and stacking onto the left, promptly when guests are finished
* Bid “Good day”, “Good afternoon,” or “Good evening” to guests as they leave
* Be responsible for the supervision and training of the banquet staff and banquet events in the absence of the banquet manager and banquet coordinator
* Prepares and submits Banquet checks and bills in an accurate and timely manner. Crops cash and paperwork per established protocols.
* Any other duties that management deems necessary for the successful operation of the banquet department
* Works independently, receives a minimum of supervision and guidance on established banquet service procedures
* Relieves banquet manager and banquet coordinator of supervisory and service details. Will have direction over banquet service personnel. Structure is moderate and most work is not checked 

Job Requirements

Required Knowledge and Skills:

* Demonstrated proficiency in English grammar and proper word usage
* Must be able to anticipate problems and use sound judgment and tact in handling guests’ confidential matters
* Must have the ability to acquire a thorough knowledge of the organization’s policies, procedures, and personnel in order to relieve superiors of specified supervisory and guest services duties
* Communication skills
* Strong customer service skills

Required Education and Work Experience

* High school education or certificate from Educational Institute, or two years of banquet service experience
* Previous food and beverage experience required
