Job Details
Basic Duties/??????:
* Recruit, train and supervise new employees of the Banquet department
* Create and maintain a pleasant working environment and foster teamwork at all times
* Fully responsible and accountable for the outlets operating budget incl. Expenses, Labour costs and profitability
* Constantly find ways to further increase revenues without sacrificing pre-determined standards
* Carry out staff appraisals and filter down own objectives to supervisory colleagues
* Propose appropriate staff movements and promotions to the Director of Food and Beverage
* Discipline staff and report all misconduct to the Director of Food and Beverage
* Communicate guest feedback to the Director of Food and Beverage at once and through the use of the outlets log book
* Ensure that all service colleagues are briefed regularly on the hotels policies and procedures
* Ensure Banquet functions are carried out under all aspects of Mandarin Oriental's Legendary Quality Standards and Legendary Quality Experience
* Ensure at all times that Banquet functions are carried out under all aspects of Mandarin Oriental, Tokyo's Safety and Security standards.
* Co-ordinate all aspects of the point of sales implementation
* Responsibilities for the timely and complete set up in accordance with the pre determined policies and procedures and Banquet Event Orders (BEO) of all meal periods in all Banquet function Rooms at all times
* Attend daily morning briefings
* Attend and prepare for all departmental meetings
* To ensure that, in conjunction with the Chief Steward a breakage prevention programme as well as adequate par stocks are in place
* Follow instructions given by the Assistant F&B Manager and the Director of Food and Beverage and perform any other reasonable duties as required by the division head from time to time
Requirements/????:
* University, Hotel School or college graduate in Hotel Management
* Minimum 6 years of hotel experience
* Minimum 2 years as Assistant Banquet Operations Manager or similar position
* Good knowledge of the local banqueting market
* Knowledge of customer service and guest contact skills
* Knowledge of handling guest / colleague complaints and dealing with them tactfully
* Knowledge of leadership skills
* Knowledge of communication and training skills
* Computer knowledge and software applications
* Good sales techniques
* Master all levels of polite Japanese language in written and spoken forms
* Able to express self in English in both written and verbal forms
* Extensive knowledge of Food & Beverage service procedures
* Good food production knowledge
* Knowledge of Food and Beverage products
* Full understanding of hospitality operations
