1. Make every effort to keep the morale of the
department staff at the highest level.

2. Ensure skills training are held weekly and
communication or feedback meetings are held monthly with
minutes taken and retained. Facilitate daily pre shift
meetings.

3. Ensure the 60 most important service standards set by
the food and beverage administrative office is followed
at all times.

4. Ensure all staff members perform according to the
service manual in regard to policies and procedures.

5. Constantly check and quiz staff members, either
verbally or through written tests, to ensure consistency
in service.

6. Generate the proper paperwork in regard to human
resources matters; i.e., hiring, recommending
termination, annual reviews, payroll adjustments and
other related matters.

7. Interview all potential staff members prior to the
final interview by the director of food and beverage.
Recommend terminations to the manager.

8. Generate the weekly schedule upon receipt of the
weekly covers forecast.

9. Maintain departments at highest level of cleanliness.

10. Ensure all staff members are properly groomed at all
times.

11. Constantly strive to assist and train new staff
members and supervisors/captains to ensure successful
development.

12. Complete a logbook at the end of each evening for
the manager?s review.

13. Ensure total awareness of in-house VIPs, review
names with staff during pre-service briefings.

14. Constantly search for improvements that will benefit
the department.

15. Monitor Mini-Bar and Amenity departments, equipment,
staff and revenues

16. Perform other related duties as assigned or
requested by supervisors/managers.
High school degree. Minimum two years experience in high
volume, high quality restaurant or room service
operation. Minimum two years management/supervisory
experience. Must be able to walk, stand, sit, stoop or
bend for duration of shift [at least (8) hours].
