Major Duties and Responsibilities:

* The number 3 role in F&B as the Assistant Outlets Manager to IRD, Roof Garden and Private Events.

* Establish and maintain a seamless level of 5 Diamond service throughout all F&B Departments which includes our relationship with Café Boulud as it relates to IRD, Roof Garden and Private Dining

* Manage schedules, payroll, purchases and expenses to maximize profitability, while maintaining service levels.

Detailed Responsibilities:

* Ensure high lever of service maintaining a high profile with customers and staff.

* To ensure the prompt and efficient service to the required standards in F&B.

* To ensure that profit margins are maintained, agreed costs are not exceeded through effective control systems, including issuing against sales analysis, menu costing and cash

* To ensure that team members are always correctly and smartly dressed, that they offer professional and courteous service to our guests

* Ensure that staffing levels are correct and to agreed standards and are not exceeded without prior consultation

* To hold regular leadership meetings and attend meetings as required

* Ensure that the causes of staff grievances are investigated and the appropriate action taken

* Ensure that fair discipline is effected

* Function as the point person for union issues and assist in training managers on how to manage a union workforce.

* Develop growth and development plan for high potential team members.

* Collaborate with HR in designing modules that directly relate to guest service, satisfaction and quality of product and service.

* Evaluate and modify current vendors and contracts as needed.

* Revise all Food & Beverage job descriptions as needed

* Evaluate current staffing levels and productivity

* Establish Food & Beverage SOPs as needed.

* Review current Surrey SOPs, identify gaps and develop training plan to address need areas

* Ensure the Food and Beverage team members are properly trained on The Surrey standards

* Set up policies and procedures and ensure they are in accordance with The Surrey standards

* Interview and select Union & Non-Union team members referred by HR

* Collaborate with the Executive Commitee team to create action plans to correct inconsistencies within Food and Beverage and Minibar services.

* Review weekly forecast volume for covers and revenue.

* Review and approve scheduled hours in line with volume range

* Ensure all overtime is authorized

* Identify and implement better methods for efficiency and reduction of payroll costs

* Know and adhere to all company policy and procedure

* Handle special projects given by F&B Manager and General Manager

* Holds Food Handlers Certificate.

* Perform any other duties and special projects required by senior management

* Ensure good working conditions for all Team Members. Maintain a safe and pleasant environment that reflects the hotels cultural diversity.

* Manage and control inventories for cleaning and guest supplies.

* Performs other duties and responsibilities as assigned or required.

* Handle and resolve all guest issues successfully and prevent further repeat occurrence.

* Conduct daily space inspections to focus on cleanliness, physical and hotel specific standards.

* Perform Lobby Duty as scheduled.

Experience and Qualifications:

Strong, positive interpersonal skills

Project management experience

Ability to manage diverse work force

Direct experience in hotel operation

Desirable:

Knowledge of a second language

CPR Certificate

Union experience in a 4 diamond hotel and room service department with a proven track record of success
