Job Description

The Sous Chef must develop proper training and direction of departmental assistants who operate in compliance with the company standards of quality, specification, portion control, recipes, employee relations, sanitation, etc.  Responsible for all phases of food production and profitability.  Supervises all food preparation personnel.

Job Requirements

A culinary degree and at least 3 years of progressive experience in a hotel or a related field are required.

                                    Assist with payroll, interviewing, ordering and scheduling of department.

                                    Assist with creating menus.

                                    Check all food purchases for proper ordering, quality and price structure as directed

                                    Responsible for food cost controls.

Must have a comprehensive knowledge of Food and Beverage

                                    An eye for detail with high service standards

                                    Strong communication and guest service skills

                                    Must be willing to work nights, weekends and holidays
