ATTENDING AND ACTIVELY PARTICIPATING IN BEO AND RELATED PLANNING MEETINGS/BRIEFINGS, COMMUNICATING ANY UP-DATED INFO TO BOH IS EXEC CHEF JOB
CONDUCTING DAILY BRIEFING WITH CHEFS AND STEWARDING DEPARTMENT LEADERS TO DISCUSS PERTINENT MATTERS AND ANY CHANGES/UP DATES OF EVENTS AND DEPARTMENT..
ORGANIZING ALL BEO CONTRACTS ACCORDING TO DATES,PRIORITIES AND TIMELINE MEAL PERIODS.PLACING ALL FOOD ORDERS AND MAKE SURE YOU DO NOT EXCEED FOOD COST PER WEEK.AND MAINTAINING ACCURATE PAR LEVELS.
ACTIVELY SUPERVISING KITCHEN STAFF DURING THE PREPARATION,COOKING AND SERVICE OF FOOD ITEMS. NEED TO TEACH AND CRITIQUE STAFF AND WATCH BOH LABOR COST!!!
SUPERVISING AND TRAINING ALL KITCHEN STAFF IN THE PROPER PREPARATION OF MENU AND PREP ITEMS ACCORDING TO EXEC CHEFS RECIPES AND OWNERS APPROVAL ,PREP SHEET WITH PRODUCTION TIME ALLOWED PER ITEM.GUIDELINES AND PROCESSES
ACTIVELY INVOLVED IN THE SET-UP OF BANQUET PRESENTATION AS WELL AS ENSURING THAT PROPER COOKING TECHNIQUES,PLATING,PRESENTATION AND GARNISHMENT OF ALL MENU ITEMS ARE FOLLOWED,FROM KITCHEN TO TABLE METHODOLOGY.
RESPONSIBLE FOR FOOD AND ALL NECESSARY EQUIPMENT GETTING TO/FROM PROPER LOCATIONS
ENSURING THAT ALL FOOD QUALITY STANDARDS ARE MET IN BUFFET PRESENTATIONS.
ENFORCING POLICIES TO CONTROL FOOD COST, FOOD WASTE, AND FOOD QUALITY STANDARDS AND SAFE SERVE AND QUALITY ASSURANCE.
INSPECTING ALL KITCHEN EQUIPMENT ENSURING THAT IT IS CLEAN AND IN PROPER WORKING CONDITION,WRITING WORK TICKETS FOR REPAIR AS NECESSARY.
ENSURING NEW HIRES INITIAL KITCHEN TRAINING IS COMPLETED AND STARTING HOURLY IS DISCUSSED WITH EMPLOYEE AND IS AGREED TO BEFORE THEY START WORKING.
MUST MAINTAIN BOH WEEKLY STAFF SCHEDULE
THE SUCCESSFUL CANDIDATE WILL HAVE MINIMUM 5 YEARS EXPERIENCE
CAPABLE OF PRODUCING 7 PARTIES IN ONE WEEK
ORGANIZATION A MUST
ABLE TO RUN A COMMISSARY
HAVE EXCELLENT COMMUNICATION , VERBAL AND WRITTEN SKILLS!!
