Part of the unique and distinguished Kessler Collection, the Four Diamond, Casa Monica Hotel is located in the oldest city in the United States, St. Augustine, Florida. The full-service Casa Monica Hotel features 138 exquisite rooms and suites, and an award winning restaurant 95 Cordova. This unique hotel is looking for an outstanding individual and leading hospitality professional to join the team as the PM Sous Chef.

As a Sous Chef at 95 Cordova, you will oversee all production during the evening shift in the a la carte kitchen. Ensure food quality assurance and presentation throughout the a la carte kitchen.

You will coordinate, plan, participate, and supervise the production, preparation and presentation of all foods for the a la carte kitchen as assigned by the Executive Chef to ensure that a consistent quality product is produced which conforms to all established standards.

In addition to the culinary aspect of the position, the Sous Chef will be responsible for management of the culinary team, including scheduling, motivation, enforcement of policies and procedures, etc.

Perform special projects and other responsibilities as assigned.

Requirements of the position include:

Ideal candidates will possess two to three years of post high school education, preferably a culinary degree, and two to three years in a related position. Requires advanced knowledge of the principles and practices within the food profession. This includes knowledge required for management of people and/or problems. Requires oral, reading and written communication skills. Must speak English fluently.

Must be self motivated and results oriented.

Must be a team leader and motivator. Leadership by example. Ensures that work areas are clean and safe. Active participation on food preparation as needed.

Work Hours: Salaried exempt position requires work on an unstructured schedule and availability on the weekends and holidays as well as evenings. This position is primarily evening hours from 3 pm onward. Schedule is dictated by the demands of the business, including training and administrative requirements.
