Executive Sous Chef

The HOLIDAY INN ALBANY is looking for experienced EXECUTIVE SOUS CHEF!!  The ideal candidate has 3+ years of hotel/restaurant experience with 2+ years culinary training.  Grow your career with established nationwide hotel management company!

RESPONSIBILITIES:

• Develop and oversee daily creative lunch and dinner specials.
• Develop and maintain new products and plate presentations.
• Utilize food ingredients to minimize waste and leftovers.
• Ensure established cooking procedures and recipes are followed, reporting any issues to Executive Chef.
• Maintain constant communications with cooks on par levels for soups, sauces, stocks, and dressings.
• Complete daily requisitions and maintain food credit flow.
• Maintain and enforce consistent sanitation procedures for walk-ins, reach-ins, shelves, drawers, freezers, etc.
• Assume responsibilities of Banquet Sous Chef as needed.
• Maintain control of food and labor costs, menu development, and costing.
• Train and supervise staff.
• Assist with scheduling and ensure team is in proper uniforms.
• Serve as back up for Executive Chef, as needed and when absent.
• Follow and implement directions of Executive Chef and management.
• Deliver thorough and quality results with professionalism in all projects and assignments.

QUALIFICATIONS:

• 3+ years of Hotel/Restaurant experience with 2+ years of culinary school training.
• Supervisory experience – preferably in hotel.
• Familiar with inventory and ordering procedures and comprehensive knowledge of hotel departments and functions.
• Thorough knowledge of applicable Federal, state, and local health, safety, and legal regulations.
• Must have a thorough knowledge of English language to communicate with customers, associates, and vendors.
• Attention to details with passion for excellence in product and service delivery.
• Projects are completed thoroughly, professionally, and with care.
• Working knowledge of MS Word and software.
•  Able to lift/pull/push up to 30 pounds and stand/walk for extended periods in fast paced environment.
• Available to travel and work weekend/evening MOD shifts, as needed.
