POSITION:        RESTAURANT MANAGER for LODGE AT DEADWOOD, SD

 

INTERESTS : New premier destination Lodge, Casino, Restaurant and Conference Center in Deadwood, South Dakota. Seeking individual for Restaurant Manager position interested in working with 20 unit award winning Restaurant Company at the Lodge. We are a growing restaurant company that has a strong “promote from within” policy and track record.

 PROPERTY : This scenic year-around resort stands in a hilltop meadow off the shoulder of historic Mount RooseveltOur spacious, Las Vegas-style casino features poker, blackjack and slots machines. Our resort offers a world of exceptional warmth, luxury, excitement and service. The décor blends the natural beauty of the Black Hills with the rich qualities of a first-class resort. The Lodge has 140 rooms and suites and the area’s finest quality restaurant dining and sports bar. Conference facilities for groups as small as 10 people or as many as 1,700 are available with year-around indoor waterpark .

 

LOCATION : This Dakota region enjoys fine quality of life ratings. It is nestled in the Black Hills National Forest Region. Panoramic mountain views are all around this valley. The Black Hills are busy tourist destination for hiking, climbing, biking, skiing and snowmobiling and Sturgis Motorcycle Rally. Historic Deadwood is rich in Western culture and casinos.

 COMPANY INFORMATION: WR Restaurants Mgt. of Sioux Falls SD dba  award winning Minerva’s Restaurant and Bar Company and is a partner with 50 unit Regency Hotel Company; one of the nation’s largest Hotel Management and Equity companies. Our WR Company has a collection of twenty restaurants with eleven catering facilities, each with a unique style but similar menu concept.  RESTAURANT / BANQUET INFORMATION : Our restaurant is upscale casual restaurant with light hard wood accents, massive custom stonework and contemporary Mountain Lodge design.   Also booth seating with separate sports bar area.  Seating up to 300 including bar and dining room seating.  The menu offers steaks / chops, grilled seafood, authentic pastas, gourmet pizzas and daily Chef features. Total F & B sales est. to be 3.1+ mill. Restaurant and bar sales over 2 million / yr. Banquets up to 1000, 15,000 sq. ft.

 

QUALIFICATIONS:  Seeking candidates with previous upscale full service experience. One year management background needed. Need superior people skills, high energy and quality orientation. Must be able to train staff. Must have some skill level in : interviewing, coaching/counseling, hands-on approach to supporting and supervising dining room and bar operations, able to assist with with labor cost control, bar ordering and bar inventory control, wine sales and service training, service and hospitality training. 

 SALARY / BENEFITS : $ 31,000 to $35,000 base salary based upon qualifications. Profit sharing up to $ 6,000 per year. 401K, Vacation, Meals, Health, Life, Dental, Lodging and Dining Discounts. Candidates will have corporate support and training from Corporate Trainer.

POSITION PURPOSE

To help maintain an efficient, profitable and professional dining room by insuring quality service in a clean attractive well maintained dining room.  To uphold our company standards and to assist the Food and Beverage Manager in the day to day activities of the Restaurant Operation.

 

ESSENTIAL FUNCTIONS

 

AVERAGE % OF TIME

40%        Working in the dining room and bar, managing from the front door working with staff by:

Ø  Greeting and seating our guests to insure proper service.

Ø  Maintain and monitor all company front of the house training standards to include the bar and insure these standards are current.

Ø  Supervising Dining Room and Bar employees

Ø  Developing floor charts, schedules, daily assignments and floor management

Ø  Managing the reservation system.

 

25%                Managing and controlling Labor costs on a daily basis

Ø  Building schedules to budgeted sales and labor cost guidelines

Ø  Calling uneeded staff off schedules

Ø  Sending staff home early

Ø  Reviewing and evaluating labor control efforts daily with daily reports

 

10%                Hiring and training the dining room staff to standard

Ø  Use profiles and hiring tools

Ø  Follow and maintain training programs

 

10%                Maintain the dining room cleanliness to company standard

 

10%            Managing and controlling Liquor, Beer and Wine costs.

Ø  Create and maintain wine and drink menus

Ø  Maintain current liquor, beer and wine prices through accurately priced and costed inventories.

Ø  Maintain the Bar cleanliness to company standard

 

5%                  Attend all management meetings and working on Mgt development.
