Alaska Denali Travel is looking for a highly creative experienced Restaurant Manager to join our Prey Bar & Eatery Restaurant Team in Denali Park during the 2013 Summer Season.

Job Summary:

Plan, organize, direct, and coordinate the workers and resources of the restaurant for the efficient, well-prepared, and profitable service of food and beverages.

Essential Functions:

  1. The primary responsibility of the Restaurant Manager is to provide the highest quality of service to the guests at all times.
  2. Attain Prey Bar & Eatery financial objectives. Adjust expenditures to reflect corresponding increase or decrease in revenue
  3. Work with Kitchen Manager - Chef and other personnel to plan menus that are flavorful and popular with customers.
  4. Work with Kitchen Manager - Chef for efficient provisioning and purchasing of supplies. Estimate food and beverage costs. Supervise portion control and quantities of preparation to minimize waste.
  5. Perform frequent checks to ensure consistent high quality of preparation and service.
  6. Supervise operation of bar to maximize profitability, minimize legal liability, and conform to alcoholic beverage regulations.
  7. Work with other management personnel to plan marketing, advertising, and any special restaurant functions.
  8. Training and scheduling of food service personnel.
  9. Investigate and resolve complaints concerning food quality and service.
  10. Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas.
  11. Maintains ambiance by controlling lighting, background music, linen service, glassware, dinnerware, and utensil quality and placement; monitoring food presentation and service.
  12. Comply with all health and safety regulations.
  13. Review and monitor, with accounting department, expenditures to ensure that they conform to budget limitations. Work to improve performance.
  14. Perform other duties as assigned by management.

  • Five (5) years prior work experience as Restaurant Manager
  • College Degree is preferred
  • ServSafe / HACCP Certification
  • State of Alaska Food Workers Card
  • Overall successful operations of restaurant.
  • Professional communication skills, oral and written.
  • Actively supervises, motivates and disciplines employees.
  • Organization and leadership skills.
  • Works well under pressure.
  • Can effectively solve problems.
  • Able to give and receive direction.
  • Excellent customer service skills.
