Alaska Denali Travel is looking for a highly creative experienced Kitchen Manager - Chef to join our Team 2013 Summer Season.

Job Summary:

Plan, organize, direct, and coordinate the workers and resources of the restaurant for the efficient, well-prepared, and profitable service of food and beverages.

Tasks and Duties:

  1. Culinary planning, guest and staff menu planning and development, checking production, and keeping records to accurately plan production requirements and requisition supplies and equipment as needed.
  2. Lead culinary prep work, creating and plating meals, preparation of snacks, appetizers, and other meals services including employee meals
  3. Responsible for controlling inventory and food costs. Work with cooks for efficient provisioning and purchasing of supplies. Estimate food and beverage costs. Supervise portion control and quantities of preparation to minimize waste.
  4. Review and monitor, with accounting department, expenditures to ensure that they conform to budget limitations. Work to improve performance.
  5. Perform frequent checks to ensure consistent high quality of preparation and service.
  6. Work with other management personnel to plan marketing, advertising, and any special restaurant functions.
  7. Training and scheduling of food service personnel.
  8. Investigate and resolve complaints concerning food quality and service.
  9. Maintains ambiance by controlling lighting, background music, linen service, glassware, dinnerware, and utensil quality and placement; monitoring food presentation and service.
  10. Able to move and lift culinary supplies and equipment weighing 50 pounds or more.
  11. Clean and sanitize workstations and equipment and follow all HACCP and applicable food regulatory rules and procedures.
  12. Implementation of kitchen-wide safety and sanitation practices as required by AK DEC and the ADT.
  13. Coordinate all culinary activities w/ the overall operation of the lodge.
  14. Supervisor may assign other duties as needed.

  • Five (5) years prior culinary and supervisory experience
  • Degree preferred in Culinary Arts
  • ServSafe / HACCP Certification
  • State of Alaska Food Workers Card
  • Overall successful operations of restaurant.
  • Professional communication skills, oral and written.
  • Actively supervises, motivates and disciplines employees.
  • Organization and leadership skills.
  • Works well under pressure.
  • Can effectively solve problems.
  • Able to give and receive direction.
  • Excellent customer service skills.
