This is an exciting and challenging opportunity to join and represent a very well respected stable hotel company with unlimited growth opportunities. We are currently recruiting for an Executive Pastry Chef at The Sagamore Resort in Bolton Landing, NY.

Specifically, you would be responsible for performing the following tasks to the highest standards:

  • Placing all food orders into hotel Adaco purchasing system, maintain accurate par levels and accurate month end inventory sheets.
  • Ability to successfully coordinate staff in a high volume, time sensitive environment.
  • Supervising and training all kitchen staff in the proper preparation of menu and prep items according to established recipes, prep sheet guidelines and processes
  • Actively involved in ensuring that proper cooking techniques, plating, presentation and garnishment of all menu items are followed, from Kitchen to table methodology
  • Ensuring that all food quality standards are met in buffet presentations
  • Enforcing policies to control food cost, food waste and food quality standards
  • Enforcing policies and standards of Eco-sure and local department of health guidelines
  • Inspecting kitchen equipment ensuring that it is clean and in proper working condition, Reporting repairs as necessary
  • Ensuring all Corporate Guidelines of menus, standards, etc. are in place and being maintained
  • Ensuring new hires initial kitchen training is completed
  • Assisting in menu planning activities as required by the Executive Chef.

 

Prefer a minimum of 10 years of experience, at least three years as Assistant Pastry Chef or Executive Pastry Chef in an UPSCALE / HIGH VOLUME hotel resort

  • Ability to work long hours and on weekends and holidays
  • Ability to work under pressure and handle stress
  • Baking and Pastry Arts degree desired.
  • Individual must be highly motivated and a working chef with a strong desire for career growth and advancement. General knowledge of food and beverage procedures, controls and administration
  •  Must have great organizational skills
  • Should possess computer skills, including, but not limited to Microsoft Word, Excel
