Position Summary: To oversee all culinary staff and all food prepared from the kitchen ensuring efficiency and quality.  To ensure effective and efficient implementation of Ameristar’s standards of excellence for quality products and service

Duties and Responsibilities

  • Ensure high standards of quality control of product and service within the food outlet.
  • Help control all food specifications: taste, appearance, presentation, temperature, portion control and quality.
  • Responsible for updating and maintaining recipes and restaurant’s electronic cookbook.
  • Assist with the development of all menus and create new food items.
  • Orders food and beverage supplies needed for all kitchens.
  • Must be able to work every station and train employees for every station.
  • Responsible for updating and maintaining recipes and restaurant’s electronic cookbook.
  • Understands and implements restaurant standards with the broader business objectives in mind; maintain a “big picture view” while maintaining attention to detail.
  • Responsible for regulating and overseeing team member and guest safety and otherwise maintaining a work environment free from safety hazards.
  • Responsible for scheduling, assigning stations and job duties to ensure proper coverage and guest service delivery in the restaurant.
  • Understands and demonstrates management’s point of view while maintaining an open mind to team member points of view; demonstrate excellent listening skills and follow-through on team member concerns and questions.
  • Must display proper communication between all chefs and cooks regarding completion of all tasks.
  • Maintain a budgeted food cost and labor cost.
  • Maintains a work environment that fosters open communication, camaraderie and teamwork.
  • Responsible for regulating and overseeing team member and guest safety and otherwise maintaining a work environment free from safety hazards.
  • Oversee training of all kitchen employees.
  • Ability to grasp, bend, lift and/or carry, or otherwise, move or push goods on a cart weighing a maximum of 50 lbs. on occasion.
  • Be an ambassador to guests who visit the restaurant, visit with guests a minimum of five minutes every hour to gather feedback about food quality and service; ensure that information is processed and responded to in an appropriate manner.
  • Create a synergistic atmosphere in the BOH for open communication.
  • Keep consistent communication with the Executive Chef on a daily basis. 
  • Always conduct yourself in a professional manner by following the policies and procedures of Ameristar Casinos, Inc.

Required Experience:

  • A degree or certificate from a major culinary institute
  • Five (5) years varied cook experience.
  • Two (2) years supervisory experience.
  • Extensive knowledge of restaurant operations, including menu planning, food, liquor and labor costing, budget, financial statements.
  • Excellent communication and organizational skills.
