The Marriott Key Largo Bay Beach Resort is located on 17 lush waterfront acres of paradise in Key Largo. We have over 13,000 square feet of flexible meeting and banquet space totaling 11 rooms, many with waterfront views. The hotel features 3 food & beverage outlets, a full service on site dive shop and a day spa.

The resort is managed by Ocean Properties, Ltd. with over 100 properties throughout the United States and Canada.

The company is seeking an eager and dedicated Sous Chef assist Executive Chef with daily responsibilities to include supervision of staff. In addition, assist in preparing food items in accordance with production requirements and quality standards while maintaining a safe, sanitary and positive work environment where teamwork is essentail to our success.

ESSENTIAL FUNCTIONS:

1. Complete daily food requisition and oversee specials utilizing any build up of overstock.

2. Assist in the responsibility to select, train, supervise, develop, discipline and counsel team members; in
accordance with Company's policies and procedures.

3. Communicate, daily, with the Executive Chef for an update regarding planning, staffing, and internal procedures.

4. Order food quantities and oversee production for banquet food operations with purchasing, banquet management and Executive Chef.

5. Complete daily walk-through of all walk in refrigerators, storage rooms, and food lines to ensure rotation, usage, cleanliness and proper sanitation.

6. Maintain and monitor overtime, labor and food costs.

7. Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per SOP.
Knowledge and Skills:

Education: High school education or equivalent experience


Experience: Minimum three years food service or related work


Skills and Abilities: Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill. Ability to communicate effectively with the public and other Team Members.
