Job Description
Summary
To supervise and advise the Restaurant Servers, Room Service, DRA's, Host/Hostess, Bartenders in the daily duties to ensure professional, competent, and prompt service to guests.
Responsibilities Other duties may be assigned
1. Report to work on time and in full uniform.
2. Each associate is expected to carry out all reasonable requests by management, which the associate is capable of performing.
3. Each associate will be required to follow the rules as found in the Concord Hospitality Handbooks.
4. Open and close shift in accordance with manager's checklist.
5. Train, maintain and enforce all service standards using record, menus, and appropriate reference material.
6. Maintain a safe and sanitary work environment for all associates and guests. Reports unsafe conditions to manager.
7. Ensure room service is fully staffed and able to handle volume of business; periodically check and assist when necessary.
8. Be on the floor during all meal periods and ensure adequate coverage.
9. Conduct taste panels and menu classes on a daily basis for restaurant and room service.
10. Monitor hours, staffing overtime on a daily basis for Restaurant, room service, bartenders, as it relates to sales and profits.
11. Understand and teach empowerment principles to ensure guest satisfaction.
12. Maintain fair and consistent counseling and/or disciplinary procedures in accordance with Concord's guarantee of fair treatment.
13. Attend and participate in Restaurant associate meetings and periodic training seminars.
14. Implement and follow through on all bookings of restaurant parties and room service hospitality suites and effectively communicate to all managers.
15. Gather and implement all proper tools for running shifts (schedules, floor plan, res. checks).
16. During shifts, ensure that guests are satisfied by assisting with service, seating, communication with kitchen and by striving to speak to all guests.
17. Ensure all side work is done on a daily basis, cleans and resets station before end of shifts, and all details are attended to in a first class manner to SOP.
18. Manage an effective repair and maintenance program through the use of work orders.
Responsibilities Assist the Restaurant Manager in all of the following duties as described
? Completely direct the operational efforts and strategies of all restaurant outlets.
? Supervises the entire restaurant room service and lounge staff. Also, all cooks, utility, and sanitation associates; and to provide supervisory guidance, aid and counsel for all kitchen and restaurant associates.
? Writes schedules, evaluates, and directs all personnel.
? Develops short term and long-term financial and operational plans for the restaurant, room service, and lounge which support the overall objectives of Concord Hospitality.
? Monitors the performance of the restaurant room service and lounge through verification and analysis of customer satisfaction systems and financial reports. Initiates corrective action.
? Maintains product and service quality standards by conducting ongoing evaluations and investigating complaints. Initiates corrective action.
? Implements and maintains sales/marketing programs.
? Establishes and maintains applicable preventative maintenance programs to protect the physical assets of the restaurant.
? Implements and maintains effective two-way communication systems which reach all employees.
? Develops new programs, which result in an increased level of customer satisfaction and operational excellence.
? Manages in compliance with established company policies and procedures, along with local, state, and federal laws and regulations.
? Performs other related duties as required.
? Ensures payroll hours and associate tip information are accurately submitted to the Accounting/HR Department in a timely manner.
? Knowledgeable and practices food and liquor federal, state, and local laws and regulations.
? Manages approved budget and operates both established guidelines in regard to costs, expenses, sales, and profit for food and beverage departments. Develops, institutes, and maintains control and procedure to ensure sameness.
? Maintains perpetual beverage controls and logs daily.
? Ensures timely and accurate ordering, storage controls, and inventory of all liquor product in the hotel.
? Performs all beverage period end procedures including price updates, inventory, c-7, and critique of expense in accordance with hotel policy, and submits that information within proscribed deadlines to the Food and Beverage Director, and Accounting Manager.
? Maintains inventory and pars of all guest service items and submits orders to purchaser in a timely manner to ensure availability to guests.
? Suggests and implements revenue generating programs that provide maximum price value to the guest.
? Teach, implement, and reward employees in utilizing their empowerment to meet or exceed customer expectations.
? Ensures staff demonstrates technical skills; conducts technical training on a regular basis.
? Updates staff on regular basis on menu highlights.
? Monitors presentation of food product and reviews areas of concern with the Executive Chef /Food and Beverage Director, Sous Chefs, and Line Cooks.
? Ensures that restaurant is clean and ready for customers at all times.
? Monitors service and teamwork on a regular basis and counsels associates on both aspects.
? Ensures that staff is utilizing up selling techniques while providing customer service.
? Accommodates group bookings by adhering to proper banquet techniques.
? Utilizes leadership skills and motivation techniques in order to maximize associate productivity and satisfaction of direct reports.
? Conducts effective employee meetings and counseling sessions.
? Participates in monthly department meetings, weekly staff meetings, weekly food and beverage meetings, monthly beverage inventory and the MOD program.
? Interviews, hires, orientates, and trains qualified applicants.
? Keep immediate supervisors promptly and fully informed of all problems or unusual matters of significance.
? Make business decisions based on production reports, similar facts, own experience, and personal opinion.
? Ensure a safe and sanitary work environment for all associates and guests.
? Maintain and enforce all SOP and service standards.
? Provide for an effective discipline orientation for new supervisors using use records, menus, and appropriate reference manuals.
? Maintain fair and consistent counseling and/or disciplinary procedures in accordance with Concord Hospitality's Handbook.
? Ensure forecast information is evaluated and utilized to make sound business decisions.
? Oversee development and execution of the marketing plan in each outlet.
? Continually develop innovative programs and incentives to maintain our competitive edge.
? Solicit feedback from guests and associates through personal contact and surveys.
? Ensure that all administrative functions are performed accurately and on a timely basis.
? Challenge supervisors to staff correctly based on forecasted business.
? Oversee engineering and implementation of menus to coincide with marketing plan.
? Ensure that all managers and supervisors are well versed in all legal aspects of their jobs.
? Develop local contacts in the community for public relations purposes.
? Maintains safe working conditions within department and hotel.
? Knows department fire prevention and emergency procedures.
? Learns, understands, and refers to the Standard Operating Procedures.
? Evaluates staff performance on a ninety day, and annual basis.
? Conducts self to reflect the high standards of professionalism within the Concord Hospitality organization.
? Performs all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position.
