Job Description

Guest Service Requirement:

Position Summary:
Oversee staff and production of all food from the kitchen, insuring efficiency and quality.

Description:
* Carries out Food & Beverage Policies and Procedures.
* Interviews, hires and trains all kitchen employee.
* Evaluate job performance and administer annual reviews of all kitchen employees.
* Administers corrective counseling actions regarding kitchen employee’s job performance.
* Orders Food & Beverage supplies needed for all kitchen needs.
* Works a regular shift as a kitchen employee and/or in the absence of a regular kitchen employee.
* Must be able to work every station and be able to train for every station.
* Control all food specifications; taste, appearance, presentation, portion control and quality.
* Ensure employee safety and sanitation procedures.
* Must display proper communication between chefs and cooks regarding completion of all tasks.
* Must be able to complete employee schedules.
* Must be able to use Remac’s System for ordering.
* Maintain a budgeted food and labor cost.
* Assist with the development of all menus and create new food ideas.
* Give directions and develop kitchen supervisors.
* Assure that all kitchen employees follow proper dress code.
* Oversee the training of all kitchen employees.
* Always conduct yourself in a professional manner by following the policies and procedures of Ameristar Casino St. Charles. 

Job Requirements

Job Requirements
* Seven (7) year varied cooking experience.
* Two (2) years supervisory experience.
* Three (3) years experience with strong buffet or institutional cooking skills.
* Extensive knowledge in the preparation and productions of all foods, i.e., soups, salads, sauces, sauté, broiler, entrée items and butchering.
* Must be able to obtain and maintain a Missouri Gaming license.
