Job Description
Position Reports to: Food and Beverage Director
Positions directly reporting to this position: Cooks, Prep Cooks, Dishwashers, Line Cooks
Basic Functions:
Direct responsibility for the overall operation of the Kitchen.
Essential Functions:
* Establish Kitchen operating standards consistent with the operations objectives.
* Develop and/or oversee menu selections for all operating outlets. Following approval by Food and Beverage Director.
* Develop standard recipes, preparation and presentation standards.
* Develop staffing guides consistent with both current and future objectives.
* Establish procedures for Kitchen employee hiring, training, probationary and terminations in accordance with policy. Prepare kitchen employees annual reviews.
* Maintains an organized and efficient flow of production, with regards to changes in forecasts and menus.
* Responsible for inventories to enable team members to successfully prepare menu items.
* Consistently checks temperatures in foods and follows proper procedures in regards to chilling, re-heating, and holding food. Ensure cleanliness, proper disposal/removal of food and proper sorting and labeling. Additionally maintain USPH/FDA standards.
* Strives to continuously improve flow of production and all other outputs by submitting ideas to the Food and Beverage Director.
* Continually monitor food and labor costs.
* Challenges and encourages creativity with team members.
* Ensure that food and labor costs are within the goals established.
* Attend Forecast and/or other meetings, as required.
* Ensure that the Kitchen is maintained in a clean and orderly manner and all working equipment is maintained in working condition.
* Perform all duties and responsibilities in a timely manner in accordance with established company policies and procedures to achieve the overall objectives of this position.
* Perform any other job duties as requested.
Qualifications &Knowledge
* Strong knowledge of all basic cooking techniques.
* Flexibility to work any shift in any area of responsibility without notice.
* Strong knowledge of herbs, spices, flavorings.
* Strong knowledge of all kitchen equipment, tools and supplies
* Ability to provide leadership, motivation and training.
* Understanding and knowledge of safety, sanitation and food handling procedures.
Skills/Aptitudes
* English language and professional communications skills are required.
* Ability to follow standards and recipes and convert quantities mathematically.
* Ability to taste all foods to assure correct preparation.
* Demonstrate a sense of urgency.
* Must have problem solving abilities, be self-motivated, and organized.
* Commitment to quality service, and food and beverage knowledge.

OTHER DUTIES: Assimilate into DHC culture and through understanding, supporting, and participating in all elements of Brand specific training requirements. Demonstrate working knowledge of the service standards. Regular attendance in conformance with the standards, which may be established by DHC from time to time, is essential to the successful performance of the position. Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the department.
