JOB OVERVIEW
The Director of Restaurants oversees the complete operation of all outlets, which includes Solstice Restaurant, Hourglass Lounge, In-Room Dining and Aqua . Duties consist of staff scheduling, outlet cleanliness, financial cost control, opening and closing procedures, food and beverage promotion and incentive programs, supervisor and staff training, while promoting a healthy and positive working environment in addition to minimizing the employee turnover rate, and ensuring policies and procedures of Stowe Mountain Lodge are followed. In addition, provides sincere service through actions that display self-confidence, grace and courtesy to guests and colleagues.
ESSENTIAL JOB FUNCTIONS
1. Develops and implements strategies for the outlets that support the achievement of the Resort's objectives.
2. Is responsible for maintaining a consistently smooth running operation.
3. Monitors and critiques food quality and service levels.
4. Ensures a consistent, seamless and luxurious guest service experience.
5. Works with the Food and Beverage Director to ensure all policies and procedures are being followed correctly.
6. Is creative and proactive planning events and strategies to increase average checks at all outlets.
7. Is responsible for inventories, purchasing, budgeting, and scheduling.
8. Forecasts and schedules staff according to occupancy levels.
9. Daily tracks payroll and revenue.
10. Ensures physical atmosphere and cleanliness of the outlets, including inspecting table tops, and side-stations.
11. Welcomes guests to the outlets in a professional manner and interacts with guests to take food and drink orders.
12. Communicates effectively with the Chef, kitchen and stewarding staff.
13. Ensures prompt delivery of food to the guest's table.
14. Has knowledge of liquor, beer, and wine. Suggests pairings of food to wine or beer.
15. Has an extensive knowledge of the outlet menus and maintains the ability to describe both the ingredients and preparation of each dish.
16. Develops and implements communication processes for shift changes in order to ensure seamless guest service.
17. Provides employees with the information needed to perform their job effectively.
18. Orients employees to the department and resort and provides on-the-job training on job responsibilities.
19. Prioritizes and assigns work.
20. Provides feedback to the employee and department head on the employee's performance of job responsibilities and performs regular job performance evaluations.
21. Ensures that each check is accurate and proper payment is received.
22. Maintains house bank and handles all cash according to Resort policies and procedures.
23. Maintains an up to date working knowledge of all resort amenities as well as any special events.
24. Prepares requests for replacement of furniture, equipment, fixtures, etc. and follows up to ensure completion of request.
25. Solicits guest feedback via guest comment cards and acknowledges guest preferences for future visits.
26. Addresses all guest feedback with the utmost confidence, grace and concern for their satisfaction.
27. Upholds all safety standards of Stowe Mountain Lodge and Destination Hotels and Resorts.
28. Is able to communicate verbally and in writing in English.
29. Is able to lift, push, and pull a minimum of 50 lbs.
30. Is able to stand/walk up to 6-8 hours per day.
31. Is a team player and interacts with all guests and fellow Associates in a positive and friendly manner.
